What do you love about this recipe? I love this recipe because (1) It uses eggplant, which isn’t a super popular vegetable, but when prepared this way it is sooo good! And (2) it really classes up the campground! I like to make this for a pre-dinner app when group camping. Enjoy!

Fire Roasted Eggplant

Ingredients

  • 3 whole eggplants
  • Olive oil
  • Sea salt
  • Honey
  • Balsamic
  • Parmesan

Instructions

For this recipe, you want to place the eggplants directly into the coals in the fire. Leave them for 5-7 minutes and let the skin get black and crispy.

Remove from the fire and let cool for 20 minutes. Once cool, remove the skin.

Slice the eggplant and drizzle with olive oil and sea salt. Top with grated parmesan and put on a grate over the fire for 3-5 minutes to let the cheese melt. Remove from heat again and drizzle with honey and balsamic vinegar.
